Chapter 3 Glucose

  1. Along with the rapidly increasing wealth of Europeans over the spice trade, a new and popular substance was on the rise. Sugar became the center of attention for its numerous variations and, of course, for the sweetness it contains that helped disguise ingredients and make flavorful treats. Glucose, a monosaccharide sugar that is present in all kinds of sugars, has the same amount of atoms in the molecules that are in nutmeg and cloves, but it’s the arrangements of the atoms that make up the taste. There is also sucrose, referring to sugar, that is combined or composed with a glucose and fructose unit- intended to be more sweeter than just having glucose alone. The chapter also mentions main sugars and nonsugars (some are poisonous) such as lactose, saccharin, sucralose, ethylene glycol, and ect. So all these real or artificial sweeteners have improved the quality of food over the years and especially have made a huge impact in the economy and the food industry. But it was the profit in which people were making that encouraged the slave trade to begin and extend to the Americas.

    Along with spices, sugar was another expensive luxury factor, in the last 1800’s. The term glucose could also be referred as sugar. Sugar is known for its sweet taste, but could sugar be replaced? One would think sugar is a mineral, with a rocklike shape, but no sugar is extracted form plants, and then put into that rock like shape we usually see on our tea tables. Just how people reacted to spices, when they were first exposed, the reaction was similar, when sugar got In the picture. People were desperate for sugar and that excelled the price….but, as people found out, sugar have good money in it, the production excelled and the price for sugar decreased. Think….what if sugar was never found….or I should say, never produced, maybe would slavery have a limit? Would things be better? Well the answers to those questions don’t have a limitation….could have…..should have….would have….but it did….and we can’t change that…. There are many things in the world, that are like sugar, that have a sweet taste, does that mean sugar can be replaced by some other factor? Honey is sweeter then sugar; if that’s the case, why don’t we put honey in out teas, instead of sugar? Although sugar is sweet, who knew it has three compounds which are completely the opposite to its sweet taste; sourness, bitterness, and saltiness.
    Interesting chapter, who knew that sugar could be so important, but could be replicable…but I guess, we humans don’t favor change. Look, at this!! I have a reason to not eat spinach now!! Spinach contains oxalin acid, which can produce kidney stones within us, and that’s not a good thing, if you didn’t know….

  3. SWEET! who doesn't like sweetness? affection or food doesn't matter haha.. everybody likes it. These sugars have big roles. It is said that it was or is used in medicine to hide its nasty taste then became necessity from luxury again. Speaking of luxury, it contributed to history through the slave trade due to the huge amount of gain, it lessened. Like peppers, sugars are also used as a preservative. There's this one thing bad about sugars. You can't have too much or too little of it. Too much sugar would result to overdosage of insulin then leads to coma, and too little of it would lack an average person glucose amounts, which is needed in respiration (breaking down of sugar) that allows us to have the necessary compounds needed in some body functions. Sweetness also aids in identifying "good food." Bitter tasting food indicates that there is alkaloid present. The sweetness is easily tasted because the most sensitive to it is at the tip of the tongue, so theres no wonder that everybody likes sweets.

One thing from this chapter that really got my attention was that it is believed that the fall of the Roman Empire might have been caused due to lead poisoning because they would store wine and beverages in lead containers and they supplied their houses with water through lead pipes. Something that I also found to be interesting is that high amounts of oxalic acid can cause kidney damage and death; I never knew this so I found it interesting. Another thing that it’s a little interesting is how sugar was in a way responsible for slavery because people in the new world realized they could make a lot of money out of sugar so they would buy thousands of slaves to work on the fields.
    I never knew that when you drink something poisonous you get extra saliva in your mouth, allowing one to spit it out as completely as possible so it was really cool to find out that you get the same reaction when you eat or drink something bitter.

  5. Glucose becomes sweetness!
    One smart fact i learned - glucose has six carbons and twelve hydrogen atoms. I know sugarcanes are sweet but u didnt know that sugar can actually be taken out from the sugarcanes. What really stood out to me was the amount of slaves being shipped -50 million- not counting the ones who died on the middle passage trip. It's crazy how ambition and money were powerful enough to exchange humans for "ore from mines". I knew u could draw sugars like glucose in a line but i didnt know that it could be also drawn in a "cyclic " form- a ring. When it comes to the "cyclic form", i learned that the OH at carbon #1 can be both abouve or below the ring. When the OH is below the ring its is known as alpha(a)-glucose, and when it is above it is beta(b)-glucose.
    What i wonder is why exactly do certain African tribes lack the lactase enzyme that ever human being should have?...is it becasue of the lack of food they are able to eat?..poverty?

So far we have learn about peppers,nutmeg and cloves just like all this substances became really famous,also sugar became popular.Sugar was another luxury that not alot of people could afford.Sugar was and is still use in many treats,food, medicine etc.In this chapter we learned also about Glucose which is a major component of sucrose,and contsists of six carbons,six oxygen and twelve hydrogen. One thing i learned about was that it was sugar that fueled the slave trade.There are also other substances just like ethylene glycol and glycerol that tastes sweet but the differnce in this two substances are that if ethylene glycol is swallowed it can caused kidney damage and death and glycerol is a safe substance to consume.Just like the book said "sugar-the desire for its sweetness-shaped human history".I like this line because it is true, without sugar there wouldn't be no flavor in our food or beverages.

  7. As of right now, sugar is just another staple in the American food chain. It’s no big deal considering the per capita in the early 1900’s – 1964 was 100 lbs per person. Sugar is made from glucose and there is such a huge variety: cane, beet, and even corn sugar. I think it is pretty safe to say there is a global sugar addiction. Sugar contains both glucose and fructose…….I found it funny how they share the same chemical formula but the atoms are arranged differently. I didn’t understand why they weren’t just the same molecule until I saw the hydrogen’s and oxygen’s in different spots….I thought lactose intolerance meant people just couldn’t consume any dairy products but now I know why.
    To begin with, I didn’t even know lactose is milk sugar that is made up of glucose and galactose which happen to be isomers (like glucose & fructose!) They are identical up to the point where their OH’s are. Lactase breaks down lactose but some people’s bodies don’t have enough lactase so they can get that enzyme in a pill/supplement to fix the problem…People that can’t digest aspartame have PKU so no wonder some things at the grocery store have a warning that says “CONTAINS ASPARTAME” or “Phenylketonurics : contains phenylalanine”…the people that have PKU can’t eat that stuff and I read before in a different book that aspartame kills brains cells although this book claims its synthetic BUT made from 2 natural amino acids…I guess some “sugar” is bad…
